The onions for the soup cook for over 40 minutes, the bourguignon braises for three hours in red wine, and the purée is beaten the Joël Robuchon way — with cold butter, through a sieve. None of it can be rushed, and that is exactly why these dishes taste the way they should. We hide none of it: the recipes are on our blog, methods included.
