Warm goat cheese salad (chèvre chaud)

Salade de chèvre chaud is a French bistro classic: goat cheese baked to gold, honey, walnuts and fresh salad with vinaigrette. In the gluten-free version the cheese sits on buckwheat instead of wheat toast.

In France, chèvre chaud comes on toasted bread. We swapped the toast for crisp buckwheat galette — the flavour is fuller and the salad becomes gluten-free. At home it takes twenty minutes.

Method

    Make the vinaigrette: whisk the mustard with the vinegar and a pinch of salt, then work in the oil drop by drop until it thickens.

    Slice the goat cheese into thick rounds and set them on pieces of buckwheat galette. Grill for 3–4 minutes until the cheese melts and browns.

  3. 03

    Toss the leaves with the vinaigrette and divide between plates. Top with the warm cheese on its buckwheat base, scatter the walnuts and drizzle with honey.

Drizzle the honey onto the warm cheese — it blooms and marries with the salty crust.
